Dan,
I was there on my own, so I don't have direct experience with the services that are available for spouses. The hotel websites have some introductory info, though, and you can write them for additional info.  I have a feeling that Dory is larger and fancier than the one I stayed in, Fedora.
If you have a car, there's lots of exploring to do, and Ravenna is an hour away with with its fantastic museums.

I should also say that each of the rides I went on weren't just rides; they passed through or ended up at some wonderful small town, or vineyard, or interesting historical place. Plus, there's the climbs made famous by Marco Pantani, who's from a neighboring town, Cesena.

I was there in mid-May, but didn't go swimming. The water was warm enough to go in, though. The beaches are very wide, and with that gentle slope the water stays shallow quite far out. The beaches were largely vacant, though. I was told that they get very busy starting in June. -- which may be a function of European vacation schedules. Riccione is one of a number of beach towns in that area; some are larger and more commercial, with casinos etc.

Some other bike hotels may cater to more aggressive riders. 

There are also some events -- the largest of them is a huge gran fondo called Nove Colli (nine hills) with approx 200km distance and 11,000 ft of climbing.  Some people time their bike vacation to coincide with events like that or smaller granfondos... https://www.novecolli.it/en-GB

I've attached a PDF of area bike routes to give you some idea of what the rides are like. These are not necessarily the same ones as what you will encounter at your hotel; but they are some of the standard rides in the area.

Lastly, I'd offer that Riccione is flat, being a seaside town.  When the Giro passes through, the peloton will go by in a blur of what seems like a few seconds. It's a huge carnival atmosphere, and lots of fun; but if you want to have a more extended experience of the Giro, it's worth it to bike (or drive) to the top of one of the nearby climbs on the route.

Lance Armstrong, Johan Bruyneel, and JB Hagar talk about the lack of sprint stages (only 4), lack of TT distance (only 36km), the impact of the Olympics next summer, the lack of a classic mountain climb, how many sprinters may decide not to ride, and who the favorites are.

#1 -Dave's Team Tandem starts at 9 from BHS

#2 - Back by popular demand, a 67 (round trip) mile ride to Royal Oaks Apple Orchard starting at 8 am from my house (@Broken Oar)
This ride will be at a moderate pace, @17, lots of sunshine and no winds and unicorn sightings
The orchard sells apple cider donuts so bring some money
Beer, Bloody Marys, etc at my house afterwards. We should be back @12:30/1pm

You are also welcome to stop by for drink and trash talk even if you can't make the ride
If you are interested, send me an email and I'll send the house address
